Shrimp fried rice anyone? « CK Fit Notes

If you haven’t figured it out yet Chinese food-I’m talking traditional take out- is one of the worst foods you can eat. Don’t get me wrong I love it but it is extremely high in bad fat, sodium, cholesterol, and empty carbohydrates. So I hate to break it to you but there is no place in your world of food for beef lo mein, egg rolls, or even chicken & broccoli (PF Changs has 660 calories, 25g of fat & 61 carbs in one serving of theirs).

Luckily for you guys I messed around and dropped a triple double in the kitchen this weekend and created 3 versions of fried rice that are not only 100% healthy but in fact IDEAL in terms of a carb/protein/fat ratio for a balanced meal geared towards promoting fat loss.

Brazilian Cheese Bread - Pão de Queijo

King Arthur Flour has the best recipes if you enjoy baking. :)

This recipe is unbelievably fantastic (read the feedback comments on the site!). It's also gluten free. I made it tonight and my house smells out-of-this world good now. Be sure to use good quality cheese and note that tapioca flour (also known as tapioca starch) can vary in how much moisture it absorbs, so you may have to add a bit more tapioca starch to get your batter thick enough.

I eat a 'Paleo' diet thanks to food intolerances, so I can only enjoy these wonderful buns with my nose - LOL - but I enjoy baking for other people. Too bad you guys aren't here to partake! :)
